I LOVE Whole Wheat Blueberry Pancakes

Michael and I LOVE to make breakfast together. I found a recipe for Whole Wheat Banana Pancakes and decided to try it out. I added blueberries instead of bananas and they turned out delicious! Top it with 100% pure maple syrup and you have a "real food" yummy breakfast.

Whole Wheat Banana Pancakes

  • 2 cups whole-wheat flour
  • 2 teaspoons baking powder
  • 1 ½ teaspoons baking soda
  • ½ teaspoon of fine sea salt
  • 1 tablespoon honey
  • 2 large eggs, lightly beaten
  • 1 ¾ cups milk (you can use any kind – skim, 2% or whole)
  • 2 tablespoons unsalted butter, melted + butter for frying
  • 2 ripe bananas, mashed (I used 1/2 of a small container of blueberries)
  • 100% pure maple syrup for serving
In a large bowl, whisk together the flour, baking powder, baking soda, and salt. Stir until well mixed and then make a well (hole) in the center of the bowl by spreading the flour mixture to the sides of the bowl. Pour the honey, eggs, milk, and 2 tablespoons of melted butter into the well, then gradually whisk from the center outward until the ingredients are well combined but still a little lumpy. Do not over mix the batter. Very gently fold in the mashed bananas (and/or other berries).

Preheat a non-stick or cast iron griddle (or sauté pan) over medium-high heat. Set electric griddles at 370 degrees F. Your cooking surface will be ready when a drop of water flicked onto the surface dances and evaporates instantly. Allow some butter to melt then ladle the pancake batter forming circles on the griddle or pan.

When the pancakes have begun to bubble in the center and the underside is golden brown, use your spatula to flip them. Cook until the 2nd side is golden brown, and then keep on a platter in a warm oven (200 degrees F) while you cook the remaining pancakes. Serve with warm maple syrup and a side of fruit. And freeze the leftovers for another day!

I LOVE the Friday Five

The anticipation for Irene made this week feel so long. Monday the weathermen were already talking about the weekend and when Irene would show up here in Charleston. Yesterday was the first day that it actually felt like the day it should be. I LOVE that it is finally Friday!

Here are your Friday Five:

1. I LOVE that Irene will not impact Charleston directly. This is the first time in my entire life that I had to be concerned about a hurricane impacting where I live. We live very close to the beach so naturally I was worried. Before I knew the exact path it was going to take I was preparing to either stay and wait it out or evacuate. I learned what supplies we need to have handy and what evacuation routes we needed to take; luckily we don't have to do either. My prayers are with those who live on the upper east coast.

2. I LOVE Carolina Panthers Football. Honestly, I think I LOVE the atmosphere that goes along with football more than I LOVE the game. I don't understand the ins and outs of football but I do LOVE when they score a touchdown. This year will be fun to watch since my fellow AppState Alumni, Armanti Edwards #14, is seeing more playing time. Also, Cam Newton is off to a great start as quarterback. We've needed a good quarterback for a while and we finally have one. So here's to tailgating and cheering loud - Go Panthers!

3. I LOVE that I have been saved by the grace of God. Thank you Jesus for dying on the cross for my sins so that I will live eternally in Heaven. With all the natural disasters going on and the devastation that goes with it, I can't imagine not having Christ in my life. Who would I turn to? Where would I put my hope during these dark times? Thank you Jesus for being there for me through the ups and downs of this world. I know that no matter how hard or dark things get, HE will be our light.

4. I LOVE scarves. Fall is just around the corner and my scarf collection will be a staple in my wardrobe. I LOVE the "something extra" a scarf adds to an outfit. I LOVE that there are many different ways to wear a scarf. I LOVE that they keep you warm (I learned this during my years in Boone, NC). I LOVE that they can be dressy or casual. Basically, I LOVE scarves.

5. I LOVE when people smile. When I was young(er) I filled out the front pages of a book where you write your name, who gave you the book, etc. One of the questions was "What is your favorite feature?" and I wrote, "my smile". Ha - I laugh about it now and wonder what prompted me to write that at such a young age. I do LOVE to smile. Whenever I am not feeling well or I am simply in a bad mood, smiling somehow makes me feel a little better. I also LOVE it when someone else smiles at you for no reason. At work I see multiple people throughout the day and I try to smile at each one of them. Who knows what they are going through and a smile might make their day a little bit better. Make sure to smile today!

I LOVE Emily Griffin

Emily Griffin is the author of the best selling books:
She graduated from Wake Forest University and University of Virginia School of Law. She moved to Manhattan to begin her law career and in the meantime she wrote her first book, Something Borrowed.  After the success of her first book, Emily Griffin decided to never practice law again and become a full time writer. I fell in LOVE with each of her books - I've read the first one twice. The first three have many of the same characters so you are able to follow their lives as they progress. The last two have different characters, although, the new characters tie into the old ones so they aren't forgotten. Click on the links above to read what each book is about. I hope she writes many more books!

Something Borrowed has been made into a movie that was released this past May. Since I read the book twice, I was very eager to see the movie and how closely it followed the storyline of the book. I have to admit that I was very disappointed. They left out a character and twisted around many of the conversations. I kept thinking, "Why mess with a good thing?", although, if I had not read the book I would probably have LOVED the movie. It is no doubt and chick-flick and I LOVE chick-flicks. Her next book, Something Blue, is currently in the works to become a movie. Hopefully, this one will be more true to the book.

I LOVE Stand Up Paddleboarding

Recently, I've jumped on the bandwagon of stand up paddleboarding. I've heard about it multiple times and have seen numerous people paddleboarding in the ocean and along the Folly River. I quickly became interested in what it was and exactly how it was done. Yesterday, Michael and I were hanging out with some friends of ours who live on a small lake who own a paddle board. We both tried it out and after a few minutes of catching our balance, we got it! After a few more practices, we'll be ready to take the paddleboard yoga class...ha, kidding.

What is stand up paddleboarding, you ask?
       You stand on a board (similar to a surf board) and use a paddle to guide you through the water. This can be done on any body of water. You balance on the board while using your core to stabilize your body while your arms, shoulders, and back push the paddle to move your board along the top of the water. It is a lot of fun and a great workout! This is a great article on rei.com about stand up paddleboarding.

Unfortunately, we didn't have our camera or our phones with us so we couldn't take a picture of us paddleboarding but here are some celebrities who have also caught wind of this sport. I LOVED it!

I LOVE the Friday Five

WHOO HOO! It's Friday.

Here are your Friday Five:

1. Blues & BBQ Harbor Cruise. I am lucky enough to live where most people vacation. Even though I have only lived here 2 1/2 years I consider myself a local. Charleston has so many great things to offer locals and tourists. Michael and I don't often do the "touristy" things but when we do I really enjoy it. I LOVE hearing the history of Charleston and I LOVE taking in the natural beauty the city holds. Last night we took the Carolina Belle for a Blues & BBQ cruise around the Charleston harbor. We enjoyed a bluegrass band while feasting on Home Team BBQ - fun & delicious! The next time you come to Charleston you must take a harbor tour - click here for more information.

2. Denim Shirts. If I were able to tell the 20 year old me that I will LOVE denim shirts when I am 26...I would laugh in my own face. I LOVE denim - pants, skirts, shorts, and jackets.  You really can't go wrong with denim. You can wear it casual or dressy. To be honest, I am somewhat surprised that I LOVE denim shirts. I fell in LOVE with it when I saw Emily Maynard wear it when she was on The Bachelor. She rocked it and now I am seeing denim shirts everywhere.

3. Chalkboard Paint. I am seeing this everywhere. One of my good friends has a chalkboard painted wall and it was so much fun to write on it and draw pictures. Here are some of my favorite ways to use chalkboard paint:

5. Bath and Body Works Stress Relief Vanilla Verbena Lotion. My sister-in-law gave me this lotion and I fell in LOVE with it. It smells so good and my skin feels great after I put it on. I recommend it to anyone who loves the smell of vanilla!

I LOVE Fall Fashion

Fall is just around the corner so fall trends are beginning to pop up everywhere. I'll have to admit - I'm liking what I'm seeing. Plaids, polka dots, and lace will be returning this fall *yes!*. The trends I am most excited about are the rust,mustard, and jade colors. You may be thinking, "those colors don't look good on my skin tone" but think again my friend. Go a shade lighter or a shade darker to match you skin tone, wear contrasting accessories to make the color standout, wear a jacket or blazer to break up the color, or wear the colors as accessories, etc. If those are colors you can wear - go bold. You will turn many heads.

I LOVE the Friday Five

Is it just me or did this week seem to drag? Thank goodness it is finally Friday!

Here are your Friday Five:

1. I LOVE Lauren Alaina. I confess that I did not watch American Idol and I had no idea who Lauren Alaina was until about 2 minutes ago when I googled her new song. I heard her song, "Like my mother does" on the radio last week and fell in LOVE with it. I heard it twice this morning and immediately knew that I had to put it on my Friday Five. A mother/daughter bond is a special bond that is indescribable. A daughter looks up to her mother even when she won't admit it. I thank God everyday for blessing me with my wonderful mother.

2. The other night we went to Hyman's to eat dinner. This is a very well known seafood restaurant in Charleston and I LOVED it. On the table there were a few cards with different sayings on them. The one I picked up was titled "40 Promises for Marriage" and since I am at the age where many of my friends are getting married, I wanted to share these true words with all of you.

3. I LOVE the Lost Dog Cafe. We already have plans to go to the Lost Dog Cafe for brunch tomorrow. It is located on Folly Beach and has the typical Folly atmosphere. On top of it being a fun place, the food is delicious. There is indoor and outdoor seating. The outdoor seating allows dogs so Tucker gets to join us which is always a nice surprise for him. Don't miss out on this awesome restaurant the next time you come to Folly!

4. I LOVE this outfit from Forever21. I am a tank top & jeans kind of girl so immediately I feel in LOVE with this outfit. It's laid back and girly. I really LOVE the floral shoes!

5. I LOVE Romans 5:8, "But God demonstrates his own love for us in this: While we were still sinners, Christ died for us."

I LOVE Soul Surfer

Last night we watched the movie, Soul Surfer. I LOVED this movie. Sony Pictures describes this movie as,
the inspiring true story of teen surfer Bethany Hamilton, who lost her arm in a shark attack and courageously overcame all odds to become a champion again, through her sheer determination and unwavering faith. The film features an all-star cast, including AnnaSophia Robb and Helen Hunt, with Carrie Underwood in her film debut, and Dennis Quaid. In the wake of this life-changing event that took her arm and nearly her life, Bethany's feisty determination and steadfast beliefs spur her toward an adventurous comeback that gives her the grit to turn her loss into a gift for others.
My favorite quote from the movie (which fits perfectly on my blog) was,
"LOVE is bigger than any tidal wave or fear."
I highly recommend renting this movie. You will LOVE it!
