I LOVE Skinny Chicken Parmesan

My favorite type of food is Italian. It's simply delicious. I also LOVE chicken. We all know that Italian food isn't the healthiest so when I came across this Skinny Chicken Parmesan recipe, I knew I had to try it. I saw it first on Pinterest and the pinner found it on a blog called Feeding my Temple. Here's the recipe:

Skinny Chicken Parmesan

serves 4 (one chicken breast each, 225 calories) 
2 (8 oz) chicken breasts, sliced in half (horizontally, or butterflied but cut all the way through. You will end up with 4 pieces of chicken)
3/4 cup seasoned breadcrumbs
1/2 teaspoon garlic powder
1/2 teaspoon Italian seasonings
1/4 cup grated Parmesan cheese
1 1/2-2 tbsp butter, melted
3/4 cup reduced fat mozzarella cheese
1 cup marinara or your favorite spaghetti sauce
cooking spray

Preheat over to 450 degrees. Line large baking sheet with foil and spray lightly with cooking spray.

Combine breadcrumbs, Parmesan cheese, garlic powder, and Italian seasonings in a bowl. Melt the butter in the microwave in another bowl. Lightly brush the butter onto the chicken, then dip into breadcrumb/cheese mixture. Place on baking sheet and repeat with the remaining 3 pieces of chicken.

Lightly spray a little more cooking spray on top (this makes it nice and crispy) and bake in the oven for 20 minutes. Remove chicken from oven and turn over. Spoon sauce over each piece and top with mozzarella cheese and bake another 5 minutes or until cheese is melted.


I served it over Penne Noodles tossed in leftover sauce with a side of roasted zucchini, squash, and red potatoes. Michael and I both LOVED this meal and we have plenty of leftovers for tonight. Let me know if you try it and if you LOVE it as much as we did.

    Skinny Spaghetti and Meatballs
    2 12-ounce to 14-ounce jars of your favorite marinara sauce
    2 slices of your fav.sandwich bread
    3/4 cup water
    1/3 pound ground veal
    1/3 pound ground pork
    1/3 pound ground turkey
    1/2 cup grated Parmesan cheese
    1 large egg
    1/2 small onion, finely minced
    1/3 cup chopped parsley
    2 tablespoons chopped basil
    1 teaspoon oregano
    1 teaspoon salt
    1/4 teaspoon red pepper flakes
    8 ounces whole-wheat spaghetti

    1. Heat marinara sauce in a large, wide pot over medium heat. Cover to prevent splattering.

    2. Remove crusts from bread, place bread in a medium bowl and pour water over. Let sit 10 minutes, and gently squeeze out excess liquid. Put bread in a large bowl; discard water.

    3. Add all the ground meats, cheese, egg, onion, parsley, basil, oregano, salt and red pepper flakes to bowl with bread. Gently toss to combine, maintaining a light touch to keep air in the meatballs (don’t squish the meat too much, or you’ll end up with tough meatballs). Roll the meat mixture in your hands to create meatballs slightly larger than a golf ball.

    4. Remove marinara sauce from heat to prevent splattering, and gently drop the meatballs in the warm sauce. Return tomato sauce to medium-low heat, bring to a simmer and cook, covered, until meatballs have cooked through, about 30 minutes.

    5. Cook pasta according to package directions, toss with marinara sauce and top with meatballs.
