I LOVE Flashback Friday

I hope everyone had a great week. Drink lots of water this weekend - it'll be a hot one!


Today's flashback is....


Teddy Ruxpin!

I used to LOVE my Teddy Ruxpin. I know most of you had this wonderful talking bear. He was the best selling toy of 1985-1986 (no wonder I had one). I bet people were stunned that this bear was able to move his mouth and eyes while telling a story from a cassette tape that was placed in his back. I'm sure I sat in amazement. 

When reading up on Teddy, I read that he had a friend named Grubby. I don't remember Grubby but they say that Grubby had a cord that plugged into Teddy which allowed them to talk to each other. Pretty cool if you are a toddler. 

I guess now they have a digital version of Teddy Ruxpin - who knew?! Maybe one day my child will have their very own Teddy Ruxpin.

I LOVE Skinny Chicken Broccoli Alfredo

I found this recipe on Pinterest and immediately knew I had to try it. I made it for dinner last night and Michael and I both LOVED it. Not only is it simple to make but it is also much better for you than regular Alfredo. Let me know if you try it!

Skinny Chicken Broccoli Alfredo

Ingredients
3 boneless, skinless chicken breasts, grilled and cut into chunks (about 2 cups)
2 cups roasted* broccoli florets
8 ounces whole wheat fettuccine
2 tablespoons extra virgin olive oil
2 teaspoons minced garlic
2 tablespoons flour
1 cup fat-free, low sodium chicken broth
1/4 cup plain FAGE Total 0% greek yogurt
1/4 cup skim milk
1/4 teaspoon pepper
1 pinch ground nutmeg
3/4 cup freshly grated Parmesan cheese

*Heat oven to 425. Cover the top of a cookie sheet with aluminum foil. Place broccoli heads into a large bowl and drizzle with Extra Virgin Olive Oil. Sprinkle with garlic powder, salt, and pepper to your liking. Mix together and place mixture onto cookie sheet. Cook for 9 minutes. 


Directions
In a pot of boiling, salted water, cook the pasta according to package directions. Drain and set aside.

In a medium saucepan, heat the olive oil over medium-low heat. Add garlic and cook, stirring frequently, until the garlic is golden, 1 to 2 minutes.

Whisk in the flour until smooth, about 2 minutes. Gradually whisk in the chicken broth, Greek yogurt, milk, pepper and nutmeg. Bring to a low boil, stirring constantly. 

Lower the heat and simmer, stirring gently, until the mixture thickens, about 3 minutes. Stir in 3/4 cup Parmesan.

Add cooked chicken and broccoli to sauce mixture, followed by the cooked pasta. Toss to combine and serve with more Parmesan, if desired.

I used a rotisserie chicken instead of grilling my own to save time, although, next time I will grill my own so that it will have chunks of chicken instead of thin strips. Don't get me wrong - it was still delicious! I also added more broccoli than the recipe requires because Michael and I both LOVE broccoli. Also, I didn't have nutmeg so I substituted with cinnamon and I don't think it made a difference.

I LOVE my iPhone

Even though it took 3 hours and the store literally closing us in - I got my iPhone! Why did it take 3 hours, you ask? Without going into detail...Everything that could go wrong with purchasing a new phone went wrong. We finally walked out of the store at 9:15pm with my iPhone in hand (and we got $25 off and a free phone case for our patience). Patience is a fruit of the spirit and I believe God was just strengthening this virtue. Always stay positive...right?

I guess my patience needed to be tested again because the next morning I placed a password lock on my phone and 5 minutes later I typed that password in and the phone told me I typed in the wrong password. Really, iPhone? I just created the password 5 short minutes ago and I absolutely did not forget it. After multiple tries, I got locked out of my phone for 15 minutes. A hour long phone conversation with Apple followed and the situation was finally fixed. Although, it deleted every single contact I had in my phone. I repeated to myself, "patience, Sarah, patience". So, after going through Michael's phone and Britney's phone, I got most of my contacts back - thank goodness.

I LOVE Blogiversaries



Yep, that's right folks...tomorrow marks my 1 year blogiversary! Honestly, when I started this fun little number I had no idea if I would stick with it or want to forget it. I can truthfully say that I LOVE it and hope ya'll LOVE it too.

Whether or not you have been reading since the beginning or have just recently started reading please know that I appreciate you. I don't know who you are but I am able to see how many visits the page gets and some days I am stunned that 1. someone is actually reading and 2. the large number of people who are actually reading. So, a huge THANK YOU to everyone.

Remember at the beginning of the month I told you I LOVE updating (#5 on the Friday Five). Well, I've made some very minor changes to the blog and will make one major change (more on this later). Since no one commented or gave me any suggestions on what to do I had to do some research and figure it out on my own. Fair enough...it is my blog, right?!?

So, here they are:

1. Very obvious change - the picture at the top of the page. Even though the Charleston Battery picture was beautiful I wanted to freshen up the page and what better way to do that than a picture of amazing tulips inside an old home located in downtown Charleston? Also, my very talented husband took this picture and it is too beautiful not to display. I tried to change the background and colors but that didn't work out. Pink and grey are my favorite colors together and I LOVE the wallpaper style background. I kept going back to this style so I decided to keep it.

2. The font. Can you tell? Ha. I did change the font so it was a little easier to read. The text options that blogger gives are kind of crazy so I went with another basic font. I promise...it is different.

3. My name. Over to the right of the page, under the "About Me" section my name used to be displayed as "sje" and it's now "Sarah". Yes people, I have a full name. So now you may be thinking, why "LOVE, sje"? Before I was married, many of my friends (including my husband) always called me SJ (my initials). It is something that stuck and whenever I would sign emails, notes or anything non-professional I would sign "sj". Yes, I used to always write in all lowercase...why, because I was in college and it was easy, duh! After I married my sweet husband, my last name changed and I started signing my new initials, sje...keeping with my lowercase trend, of course. So, why did I change it back to "Sarah"? I started commenting on other people's blogs and figured they had NO clue who sje was but they might have an idea of who Sarah was. Ha, I told you I made minor changes!

4. Birthdays. Over the past year, I tried to highlight my family and close friend's birthdays on my blog. I missed a few people and feel badly for it so this year I will probably give a shout out but won't write an entire blog. Please don't be offended if you don't get one this year...you mean just as much to me this year as you did last year, promise.

5. Pictures. After researching which blogs y'all liked the most I realized y'all really liked when I would post pictures of events/weekends that I attended. I should actually be better at it this year because I will have the iPhone (getting it today...yeah yeeeeah!) and can take better pictures when I don't have my camera with me. Bye, Bye Blackberry. Also, I used to copy and paste pictures and realized sometimes they don't show up. I'll do a better job about actually uploading the pictures so they are there to stay.

and for the major change............




No more Friday Five. I know, I know...that is a HUGE part of my blog - but - what I am replacing it with will spice things up a bit. As you all know, things that are repetitive can quickly become boring and honestly I started to get bored with the Friday Five.

Confession: Some days I didn't have 5 things to write about so I threw in some randoms and although I still LOVED all 5 things, I probably wouldn't have posted them if it wasn't for the Friday Five. Some weeks, I wouldn't post during the week so I had 5 things to write about on Friday.

So, what am I replacing it with??

Flashback Friday. I will share something that I LOVED from the past such as a toy, movie, etc. I am sure you all will LOVE reminiscing just as much as I will. This will start next Friday :)

I LOVE my Dad & my long-time friend Ashley

Ashley and I have been friends since kindergarten and she is so special to me. She is the kind of person that makes you feel LOVED as soon as you meet her. I hope you have an amazing day and I hope year 27 is the best one yet! Let's get together soon - I miss you!

I LOVE the Friday Seven (Father's Day edition)

Happy Friday friends! This weekend is a special one because it is Father's Day on Sunday (you're welcome for the reminder). Just like I highlighted the special Mother's in my life on Mother's Day, I am going to do the same for Father's Day.

Here are your Friday Seven:


1. I LOVE my dad. My dad is the greatest. He is smart, kind, caring, and puts Christ first in all areas of his life. He LOVES our family so much and is a very present and involved father. His wonderful sense of humor and laid back personality makes him so much fun to be around. I am so grateful for all the times we get to spend together, although, those times are never long enough. I hope you feel as special as you are on this Father's Day - I LOVE you!





2. I LOVE Joedy. I've said it before and I'll say it many times more - I have the best in-laws. My father-in-law, Joedy LOVES the Lord and his family with all he has. He is a strong man with a gentle heart. He has a caring, kind spirit and is the first to help anyone who is in need. I am proud to be part of his family. I LOVE you!





3. I LOVE my Uncle Stew. I have never met anyone who compares to my Uncle Stew. He is hardworking, strong, talented, and a "man's man" - but also - kind, caring, and the most LOVING family man. He allowed me to live with him for 7 months and provided everything I needed and more. I am sure he would have let me live with him forever if I needed too. He is the definition of a generous man. Thank you for always being so welcoming and caring. I always think of you every Father's Day and am so grateful for you. I LOVE you!

4. I LOVE my Grandpa Judy. Many of my family members say I look the most like my Grandpa Judy and I am grateful because he is handsome! He always has a smile on his face and is interested in what's going on in your life. He worked hard his entire life to provide for his family. He is a family man and LOVES when we are all together. It is always a fun time when we are able to get together. I wish we lived closer so we could see each other more but I hope on this Father's Day he knows how much he is LOVED. I LOVE you!





5. I LOVE Hank. Hank is technically my Step-Grandfather, although, I can't remember life without him. He has always been there for me and LOVED me as if we were related by blood. He is kind and LOVES to be around his family. He is a wonderful dancer and there are times I wish I could sit and watch him and Nana dance together for hours. It's been way too long since we've seen each other and I hope that changes soon! I LOVE you! 





6. I LOVE Josh. My brother-in-law Josh is a wonderful father. He LOVES his family so much and will do anything for them. His home is centered around the Lord and is a great example for us all. He knows how to "let loose" and have a good time. He has an addicting laugh that will brighten up a room. He is honest, trust worthy, and LOVING. I LOVE you! 






7. I LOVE my Grandpa Britt. My Grandpa Britt passed away almost 4 years ago but I can not let him go unrecognized on my blog. I think about him and miss him a lot, especially on Father's Day. Grandpa Britt was a tough, southern man. He had a tender spot in his heart for his family and his LOVE was felt as soon as you walked in the door. He always had fudge striped cookies ready and waiting for my brother and I every time we would come to visit. I'll never forget waking up to the smell of him making the most delicious breakfast every time we were there. He is missed and will never be forgotten. I LOVE you! 




HAPPY FATHER'S DAY to all the father's out there. I'm not able to highlight everyone I know but I am thinking about you all on this special day! I hope you all feel special and LOVED.

I LOVE Chocolate Toffee Caramel Bars

I was first introduced to this delicious dessert by my Aunt Angie when I lived with her in Virginia. I instantly fell in LOVE with it. When Michael would come to visit, we made sure to have it ready for him as he walked in the door because he LOVED it that much. Trust me - if you make this dessert for your family and friends - they will LOVE you for it.

Chocolate Toffee Caramel Bars
1 pkg Pillsbury Butter Recipe Yellow Cake mix
1/3 cup Vegetable Oil
2 eggs
1 12oz pkg Semi Sweet Chocolate Chips
1 cup White Chocolate Chips
1 pkg Heath Bar bits
1/2 cup Margarine or Butter (1 stick)
32 Individually Wrapped Caramels
1 14oz can Sweetened Condensed Milk

                      .....I said it was delicious (I never said anything about it being healthy!)


Heat oven to 350. Grease 9x13 pan.

In large bowl, combine cake mix, oil and eggs. Blend well then stir in chocolate chips, white chocolate chips and heath bar bits. This mixture will be very thick.


Press half of mixture into bottom of greased 9x13 pan to make crust. Bake at 350 for 10 minutes.



Combine butter, caramels and sweetened condensed milk in a saucepan over med-low heat. Heat until caramels are melted, stirring frequently. Continue to heat until smooth. Keep an eye on it because the caramel will burn if it isn't stirred frequently.


Pour this mixture over baked crust.



With your hands, spread out the remaining dough mixture evenly on top of the caramel mixture.


Baked 25-30 minutes until top is set and edges are golden brown. Cool 20 minutes and run knife around edges of pan.


Cool another 40 minutes and cut into small squares.

I LOVE Lady Antebellum

If you remember from the last Friday Five, Michael and I headed to Charlotte this past weekend and saw Lady Antebellum in concert. They were amazing. They sound exactly like they do on the radio and they put on a very entertaining show. Darius Rucker was one of their opening acts and he was fabulous as well. I'll have to admit that when he started singing his Hootie and the Blowfish songs I began to sing a little louder! Overall, it was one of my favorite concerts.

We were also able to spend some time with family & friends which made the weekend even better.






Happy Birthday to one of my closest friends, Kellie. You are so dear to me and I hope you have a wonderful birthday! LOVE you Kemmy!

I LOVE the Friday Five

Sorry I have been a lady of very few words this week. I started a cleanse on Monday and although it surely did "cleanse" me, I wasn't in the best mood and didn't have much to say. The cleanse was a 3 day cleanse and at the beginning of the week I thought to myself, "I can do this until Friday morning"...yeah, right! 3 days was plenty long and I am glad to say it is over! Here are your Friday Five:

1. I LOVE Lucky's. Last weekend, Michael, Britney and I took my parents to Lucky's and we all LOVED it. Michael and I have been before but I fell in LOVE with it all over again. Lucky's is located on James Island and definitely worth the stop if/when you are in the area. I recommend the salmon BLT or the fried chicken plate - delicious!





2. I LOVE Bare Escentuals. Most of you know my LOVE for Bare Escentuals especially the Bare Mineral makeup. Thanks to a birthday gift from some wonderful family members (Thanks Daniel & Ashley) I was able to revamp my Bare Escentuals supply and I LOVE it! This weekend we are going to see Lady Antebellum, Darius Rucker, and Thompson Square in concert and I am so excited!







4. I LOVE the CMT awards. Actually, I LOVE everything CMT. Congrats to my girl, Carrie, who won video of the year. In my opinion, she was also the best dressed. I LOVED her sequined dress and chunky black pumps.

5. I LOVE WhoNu? cookies. WhoNu cookies are a healthy version of your favorite cookies. They are also very yummy...WhoNu? ha. WhoNu cookies don't have trans fat, hydrogenated oils, or high fructose corn syrup like other cookies do. Next time you are in the store looking for something sweet, try the WhoNu cookies...you won't be disappointed!

I LOVE the Friday Five

Happy Friday friends! I LOVE four day work weeks :)

Here are your Friday five:


1. I LOVE Joy Kills Sorrow. Remember yesterday when I told you my girlfriends and I were going to the Joy Kills Sorrow concert at the Spoleto Festival? I promised you my review so here it goes: I LOVED them. They were a great band with a lot of personality. The lead singer had an amazing voice. The band members rocked out on their instruments. I would definitely go to their concert again!

My favorite song of the night was the one below titled, "One More Night"

2. I LOVE when my parents visit. My parents are coming to Charleston tomorrow - yippee!! I haven't see them since Christmas so I am excited to spend some quality time with them. Drive safe Mom & Dad!




3. I LOVE summer hair. I am finally getting my locks cut tomorrow! I can not explain in words how excited I am to cut *inches* off my hair. Super stoked. Since it's June, it's now time to put my highlights back in so my hair will look sunkissed and bright(er). Hello summer hair! Please note: if you live in Charleston and need an amazing hair stylist...go to Urban Nirvana Hair in West Ashley and ask for Cady. She is amazing. Although, you need to call weeks in advance because she books up quick!





4. I LOVE a turkey burger topped with an apple. Have you ever tried a turkey burger with brie cheese, spinach, and an apple?? If not, I highly recommend it! It is simply delicious. If you live in Charlotte - go to Bad Daddy's and order the Frenchie. If you live in Charleston - go to HoM and order the Green Gobble'n. Those are my two favorite turkey burger's topped with an apple!

  



5. I LOVE updating. Believe it or not, later this month will mark my one year blogiversary! Crazy, right? Anyway, I will be updating my blog and would LOVE your suggestions. What posts have been your favorite? What types of posts would you like to see more of? What posts did you not even open because the title didn't impress you?
